Strategically located minutes from Mall of America and a short drive from Minneapolis – Saint Paul International Airport and downtown Minneapolis, the property has welcomed generations of business and leisure travelers alike. The recent transformations further strengthen the hotel’s commitment to its guests and community. This is the first Embassy Suites in the region with this Minnesota-inspired design concept. The hotel’s signature offerings remain central to the experience, including complimentary cooked-to-order breakfast and the nightly Evening Reception.
The Transformation
The complete renovation represents a multimillion-dollar investment and marks a new phase for the hotel. It positions the property as one of the most refreshed and distinctive options in the Twin Cities market.
Its all-suite concept featuring eight floors with 232 two-room suites surrounding a signature open-air atrium helped define the Embassy Suites brand experience for decades. Each suite features a separate living area with a sofa bed, a private bedroom, and a wet bar equipped with a microwave and mini fridge.
General Manager Jason Lott oversees the property and spearheaded the renovations which began in November 2025.

Fully Renovated Two-Room Suites
Every one of the hotel’s signature two-room suites – the spacious, suite-only accommodations Embassy Suites is known for – has been fully modernized across all eight floors. The full-service dining experience guests expect from Embassy Suites gets a bold new chapter with the debut of the refreshed “Up North” concept at Iron Range Restaurant & Bar. The revitalized restaurant and bar offer a warm, approachable atmosphere and a thoughtfully curated menu making it a welcoming destination to dine, unwind, and connect, morning through evening.
Embassy Suites by Hilton Minneapolis Bloomington Edina is committed to the local community. To support the local economy and give back, they collaborated with a local designer and construction team.
The redesign, led by Ste. Marie Design, Inc. of Shoreview, was inspired by the serene beauty and timeless traditions of Minnesota’s lake country, blending modern sophistication with the warmth and familiarity of the North. This is the first Embassy Suites in the region to incorporate a Minnesota-inspired design concept.
Guests will experience calming tones reminiscent of water and ice, layered with natural wood finishes, cozy textiles, and handcrafted details that evoke the comfort of a lakeside cabin. The result is a hospitality experience that feels both distinctly local and refreshingly modern. A place where guests can gather, relax, and connect.
Construction was led by Apex Renovations Group LLC, based in Rockford, Minnesota.
The Name Transition
In addition to the renovation, the expanded name reflects the hotel’s connection to Bloomington, Edina and the greater Minneapolis area, while reinforcing its role as a hub for meetings, celebrations and community events.
The hotel continues to serve a mix of corporate, group and leisure travelers, with proximity to major employers and the region’s robust sports and events scene.

The hotel has been managed by HVMG since September 2024. A grand unveiling event will be announced in the coming months.
